Ingrédients

  • 450 g frozen spinach thawed and drained
  • 1 shortcrust pastry
  • 4 eggs
  • 30 cl crème fraîche
  • 3 tbsp grated parmesan
  • 1 goat cheese log sliced
  • 1 pinch nutmeg
  • Salt and pepper to taste

Equipment

  • Oven
  • Pie pan
  • Salad bowl

Method

  1. Preheat the oven to 180°C (356°F), thermostat 6.
  2. Thaw and drain the spinach thoroughly to avoid a soggy quiche.
  3. Line a pie pan with shortcrust pastry and prick the base with a fork to prevent puffing during baking.
  4. Blind bake the pastry for 10 minutes to ensure a crisp crust.
  5. In a salad bowl, whisk the eggs with crème fraîche, grated parmesan, nutmeg, salt, and pepper.
  6. Spread the spinach evenly over the pre-baked crust, pressing lightly.
  7. Cut the goat cheese log into slices and arrange them over the spinach.
  8. Pour the egg mixture over the spinach and goat cheese.
  9. Bake for 30-35 minutes until the quiche is golden and set.

Notes

Don’t hesitate to customize the quiche with your favorite cheeses or add sautéed onions, mushrooms or lardons. For an extra-crispy crust, blind bake the pastry before adding filling. Let cool slightly for easier slicing. Also delicious served cold or reheated.
